Biscuits and Chicken a la King


I love biscuits!  I was planning on making chicken a la king (my momma's recipe) for dinner and thats usually served on rice.  But I got to thinking - it would be really good over biscuits and boy was I right!

First for the biscuits:
I don't like to make anything too time consuming so this recipe was perfect.  Just pop all the dry ingredients into a food processor.  Add in the butter (frozen is better) and blend that up till its kinda crumbly.


In a separate bowl I mixed up the eggs and milk and then poured that into the food processor too.  Let that mix until its just combined and dumb out onto your counter (I like to put it on a piece of parchment just because clean up is easier).




Then roll it out.



I sprinkled on just a bit more flour before I rolled it out so it wasn't too sticky.  After its rolled out, cut biscuits with a biscuit cutter and put them on a greased cookie sheet.  Bake at 450° for 10-15 minutes.  You should get about 12 biscuits from this recipe.


Then spread some jam on top and enjoy!





Biscuit ingredients:
3 C flour
3 T sugar
1/2 t salt
4 t baking powder
1/2 t cream of tarter
3/4 C butter (mine was frozen)
1 egg
1 C milk (I just used 1% because thats what we had in the fridge but any kind will do)


Next comes the Chicken a la King:
Melt the butter in a sauce pan and add the flour.  Let that cook for just a couple minutes and then add the milk, slowly.  You don't want any lumps.  After the milk, slowly add the broth.  Once you have the sauce made you can just dumb the rest of the ingredients in.  My mom always made our with peas and so thats what I do too.  But, I think any veggie would taste great.  And like I said, usually we eat this over rice (if of course you don't have yummy homemade biscuits).

Ingredients:
1/2 C butter
1/2 C flour
2 C milk
1 1/3 C chicken broth
2 C cooked chicken
1 C peas
Salt and Pepper to taste (I like a lot of paper in this sauce)
